After publishing my recipe for Traditional Ratatouille, I had some leftover ratatouille. So I made this delicious Vegetarian Ratatouille Bowl. A simple yet light meal!

The secrets of my traditional Ratatouille recipe!

Ratatouille is one of my favorite vegetable dishes in the summer! It was also one of the first dishes I learned to cook with my mom.

Have a look at my complete article on my traditional Ratatouille recipe. Here are my tips for making a ratatouille without the vegetables being completely mashed. And all this without spending hours in the oven!

A perfect recipe for a take-out meal!

This Vegetarian Ratatouille Bowl is a perfect recipe for a take-out meal.

Place the cooked rice and ratatouille in a Tupperware-type container. Add the feta cheese. For the avocado, I advise you to carry it separately and cut it at the last moment.

Recipe Vegetarian Ratatouille Bowl

For 6 servings you need the following ingredients.

Ingredients

For the ratatouille

  • 1 eggplant
  • 2 small courgettes or 1 large courgette
  • 1 red pepper
  • 400 g whole tomatoes, canned or fresh
  • 1 yellow onion
  • 3 cloves of garlic
  • 1 tablespoon of dried thyme
  • Salt and pepper
  • Olive oil

For the vegetarian bowl

  • 400 g brown rice
  • 2 avocados
  • 200 g of feta
  • Salt and pepper
  • 2 limes

Preparation

Preparation of the ratatouille

Start by cooking the ratatouille. To do this, cut the eggplant, zucchini and bell pepper into cubes. Mince the garlic and onion.

In a saucepan or sauté pan, sauté a drizzle of olive oil. Sauté the onion and garlic. Add the eggplant and sauté for 5 minutes. Add the zucchini and bell pepper. Sauté for 2 minutes.

Pour in the tomatoes, thyme, salt and pepper. Mix well and fry for 1 hour on low heat. Click on the link to read the detailed recipe for this Traditional Ratatouille.

Preparation of the vegetarian bowl with ratatouille

Cook the rice as directed on the package.

Cut the avocados in half and remove the flesh with a tablespoon. Then cut the avocado into strips. Crumble the feta cheese.

Serve the rice in a bowl, add the avocado, a portion of ratatouille and sprinkle with feta. Add salt and pepper. Finish with a drizzle of lemon juice.

Frequently Asked Questions

Can this vegetarian bowl with ratatouille be eaten cold?

Yes, absolutely! You can serve this vegetarian bowl both cold and hot.

Can we freeze this recipe?

Yes, some of it. You can freeze the ratatouille and rice in a separate container or together. I don’t recommend freezing the avocado.

As for the feta, you can freeze it with the ratatouille. If you heat it up, the feta will definitely melt but it’s just as good.

I don’t like peppers, can I remove them?

Yes, you can! If you don’t like any of the vegetables (zucchini, bell pepper or eggplant), you can remove them or replace them with other seasonal vegetables.
