Do you have a few apples left that are starting to get old? Then try this recipe for Apple Cake Super Soft! This apple cake recipe is quick and easy and rich in apples, which makes it relatively low in calories and super moist.

The little extra of this apple cake? I added ground hazelnuts, a detail that makes this cake taste even better.

How to make a super moist apple cake?

This cake is really ultra moist! And my secret? This time, it’s not the amount of butter like in my Ultra Moist Marble Cake, in this recipe, there is not even 100 g of butter. No, this recipe is much healthier!

My #1 secret is adding lots of apples. In this recipe, there are 6 apples. These are cut very thinly, so that they will melt during cooking and give back juice, which makes the cake soft.

In addition, I use very little flour and I replaced some of the flour with ground hazelnuts. Ground hazelnuts, like ground almonds, is lighter and airier than flour, which also gives the cake a softer texture.

Recipe for Apple Cake Super Moist

For 8 servings you need the following ingredients.

Ingredients

  • 6 apples
  • 4 eggs
  • 100 g of sugar
  • 240 ml of milk
  • 160 g of flour
  • 10 g of baking powder
  • 80 g ground hazelnuts
  • 80 g soft butter
  • 1 teaspoon of cinnamon

Preparation

Cut the apples into quarters and peel them. Using a mandolin or a knife, cut the apples into thin strips.

In a bowl, add the eggs and sugar. Whisk everything well. Add the butter and whisk again. Mix the flour with the baking powder.

Then pour in the flour mixed with the yeast, powdered hazelnuts, cinnamon and milk. Finally add the apples. Mix again.

Pour the batter into a rectangular glass pan lined with parchment paper or a round pan.

Bake at 175°C (fan oven) for 45 minutes.
