Where does Gaperon come from?
Gaperon is a French cheese from Auvergne, more specifically from the Limagne plain north of Clermont-Ferrand.
Gaperon is a cheese made from raw cow’s milk. Its ball shape comes from the fact that the cheese was traditionally ripened in a cloth in the open air, thus forming a ball.
What is the particularity of Gaperon?
The particularity of the Gaperon is that it is matured with garlic and black pepper which gives it an intense taste in aromas. If you like garlic, you will love this cheese!
Gaperon is made from whey, a by product of cheese or yoghurt production which makes this cheese less rich than most cheeses (about 30% fat).

Grilled Cheese Sandwich with Gaperon Recipe
For 2 servings you need the following ingredients.
Ingredients
- 2 slices of wholemeal bread
- 50 g of gaperon
- 1 onion
- 1 handful of baby spinach
- 10 g butter
- Salt and pepper

Preparation
Preheat oven to 175°C.
Chop the onion. Heat a little butter in a skillet and sauté the onion for 10 minutes on medium/low heat.
Meanwhile, butter the bread slices on both sides.
Cut the gaperon into slices.
On a slice of bread, place baby spinach, gaperon and caramelized onions. Close the sandwich with the other slice of bread. Season with salt and pepper. Place on a baking sheet lined with parchment paper.
Grill the sandwich in the oven for 15 minutes at 175°C.

- Baby spinach: You can replace baby spinach with arugula, cooked spinach or herbs such as basil.
- Onion: You can replace the onion with red onion or a shallot. If you don’t have time to brown it, you can add it raw. In this case, reduce the quantity (1/4 onion per sandwich) because raw onion is stronger in taste.

No, I do not recommend freezing this Grilled Cheese Sandwich.
However, it is quite possible to freeze Gaperon. Put it in a closed container or covered with cling film and it will keep for about three months. Then let it thaw for 12 hours in the open air before serving.
