This is one of my favorite ways to prepare Pointed Cabbage: roasted in the oven! To accompany the grilled pointed cabbage, I made a tahini sauce. The two are a perfect match!

Roasted Pointed Cabbage with Tahini Sauce

What is a pointed cabbage?

Pointed cabbage also called“hispi cabbage” or“sweatheart cabbage” is a kind of white cabbage with a cone shape and a light green colour.

The peculiarity of the pointed cabbage is that it is harvested in spring andsummer unlike most other varieties of cabbage which are winter vegetables.

Its taste is delicate and slightly sweet. It is therefore ideal raw in salads, cut finely for example. It can also be cooked in a wok like white cabbage or added to a ramen broth (Japanese soup).

Oven roasted, as in this recipe for Roasted Pointed Cabbage with Tahini Sauce, the cabbage develops a slight nutty taste.

Roasted Pointed Cabbage with Tahini Sauce

Recipe for Roasted Cabbage and Tahini Sauce

For 4 servings you need the following ingredients.

Ingredients

  • 1 pointed cabbage
  • Olive oil
  • Salt

For the tahini dressing

  • 100 g Greek yogurt
  • 50 ml olive oil
  • 1 tablespoon of tahini
  • 1/2 lemon
  • Salt
  • Pepper
  • 1 clove garlic, small or half

Preparation

Wash the pointed cabbage and cut it into quarters. Place the quarters on a baking sheet lined with parchment paper.

Add a dash of olive oil and a pinch of salt. Bake for 30 minutes at 180°C. After 15 minutes, check that the cabbage does not turn black. If so, continue cooking by covering with aluminum foil.

Meanwhile, prepare the tahini sauce. Mix all the ingredients in a blender and check the seasoning.

Serve the pointed cabbage still warm or cold with the tahini sauce.
